Salad Greens with Parmesan Crisps and Poached Egg


Lots of lettuce these days finally, so plenty of fresh salads!  In this case, for me, no additional salad dressing is needed; the yolk of the poached egg provides plenty of gooey goodness. If you want a dressing, I would suggest a small amount of oil/vinegar dressing is all that is needed.



Parmesan Crisp:  Spread 1/4 cup grated parmesan into 4 circles on a parchment paper lined tray.  Bake at 350 degrees for about 10 minutes - maybe less, keep a close eye on the last few minutes.  Let cool, then cut in half or as desired.  I also like to bake squares, then cut diagonally for triangles.
