Banana Muffins with Pecan Streusel Topping


I've been making the same banana bread recipe since I first learned to bake in my teens.  I've adjusted that recipe to make muffins, and added a streusel topping for an extra treat.

Combine in large bowl:
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Cream together:
  • 1/4 cup butter
  • 1/4 cup cream cheese
  • 3/4 cup brown sugar

Add to butter/sugar mixture:
  • 2 eggs, beaten
  • 3 bananas, mashed

Mix wet ingredients into dry; stir just enough to moisten.  Pour batter into regular sized muffin tins - makes about 11 muffins.

For the streusel topping, mix together:
  • 1/3 cup brown sugar
  • 1/4 tsp ground cinnamon
  • 8 pecans, finely chopped
  • 1 Tbsp butter

Top each muffin with some of the streusel mix.  Bake at 350 for approximately 25 minutes or until inserted toothpick comes out clean.
