Corn and Crab Soup

This is a super quick, nutritious and delicious soup if you happen to have crab meat on hand - which is not often for me, but maybe more often for you depending on your location!  Winter has worn me down, another bunch of snow earlier this week.  I can't think straight anymore.

Need hot, nourishing soup to feel better ... ahhhhh!





Ingredients:
1 can drained kernel corn
4 cups chicken or veggie stock
2 tsp grated fresh ginger
1 Tbsp light soy sauce
1 tsp each ground pepper and kosher salt
8 oz crab meat
1/3 cup sliced green onions
2 whole eggs (or whites only), beaten
Sesame oil

Method:

Combine corn, stock, ginger and soy sauce in a saucepan.  Bring to a boil, immediately reduce heat and simmer about 5 minutes.


Add pepper, salt, crab meat and green onions.  Cook another few minutes to heat the crab through.







 Stir in the beaten egg and serve immediately.  Drizzle with sesame oil.
