Harvest Monday: July 7, 2014


Here is my harvest from the past week.  Check out Daphne's Dandelions to see harvests from other gardeners around the globe.

I've had plenty of greens this week so lots of salads and other delicious meals.

Arugula, Chard, Lettuce Greens and Spinach

Some of the chard was used for a tasty tart with chives and beet greens.


And more chard and some spinach were blanched, drained and frozen for later use.



The arugula was combined with garlic scapes for a delicious pesto recipe - see here.


And the small amount of kale I have was set aside for a salad.  I don't seem to be getting enough to blanch and freeze for the winter.  Maybe it just hasn't kicked in yet as I've reseeded several times already.


Cilanto and mint were made into another pesto ... I'll share that recipe soon.



And I finally have cucumbers ... combined with garlic scapes, mint and dill to make a tzatziki sauce with my homemade yogurt.  Perfect for the baby carrots I pulled while thinning the patch.





And last, and very much the least, the blueberry plant I started just last year has yielded a single ripe berry.  Only a dozen more berries on the plant so far ... but since the second bush did not even last the winter, I'm happy to see this much!

  1. I can't wait for my cucumbers. I see them starting to flower, but I don't know when I'll get to pick the first one. I love making tzatziki sauce too.

    1. I get so paranoid about cukes growing so fast that I tend to pick them on the small side. Ooh, I lloooove tzatziki!

  2. That's so funny with the blueberry. We have a cherry tree and the 2nd year it gave only gave us 2 or 3 cherries - so there I stood with my kids, splitting the cherries in half so everyone could get a taste!

    1. Oh my gosh, same for me with my plum trees. I bought three new plum threes last year and, surprisingly, got a single plum! Pretty tasty too. Nothing this year yet.

  4. Garlic scapes always make me curious, I have not seen them in the U.K, will have to hunt out some seeds. Liking the idea of tzatziki, perfect for the summer.

    1. I checked out your website, looks great! Garlic scapes only come from hardneck varieties - not sure what is the normal type in the UK, but good luck! They are an extra bonus for garlic growers.
