Harvest Monday: February 23, 2015

With another big dump of snow this weekend, the upcoming gardening season seems so far away.  But I was still able to enjoy some of the few remaining harvests from last year; in particular this weekend as I had a visit from a friend I hadn't seen in a while ... good food goes well with good company!

I had a repeat of this pasta with kale, mushrooms and my last acorn squash - with minor adjustments for the ingredients I had on hand.

And I served up some fingerling potatoes (with the same store-bought kale used in the previous dish) alongside baked trout.  Plus a drizzle of truffle oil - always a nice addition to homegrown potatoes.

I'll be popping over to Daphne's Dandelions to see what other Harvest Monday contributors have going on this week ... check it out!

  1. I thought the pasta was the meal...and then you ALSO serve up some delicious trout & potatoes. Very lucky friend indeed!

I think they said that 75% of Ontario is under an extreme cold warning right now - it's another record breaking day.

    1. Yes, frostbite warnings all over the place yesterday and today - my front door froze shut (it was a bit warmer then cooled so suddenly) - took me 5 minutes of heaving to get it open this morning. Oh my gosh, it's wearing on me now ...

  2. Yum. I guess we were lucky last week. We got a little bit of snow, but I think more melted out than landed on us. I'm really happy for that. But I'm going to have to dig out my apple tree soon or when the snow all melts it is going to crack some branches.

    1. Oh yes, I never thought about the fruit trees. I have plenty of pines / fir and the branches quite often snap off, but not too much of a concern. But it would be awful to lose a branch on an apple tree.

  3. Oh yum, it all looks so good. And how gratifying to be able to serve up some goodies from your garden, especially at this time of year.

    1. I am amazed I stretched it out this long - I have very little left. But it is gratifying, I agree.

  5. I will definitely try that pasta next winter, sounds delicious! It's still ridiculously hot here in Adelaide, Australia so all those lovely snow pics are great to look at, can't say we ever get snow here :)

    1. I neglected to mention that I added herbed goat cheese. An excellent addition I might say. :) Ooh ... Australia sounds awfully nice right now (actually most of the time).

  6. You are making me very hungry well sitting here at work :)
Pasta looks delicious! The trout looks good! Yes, I'm so tired of this deep freeze every other day and then snow every other day.

    1. Spring is going to be such a relief - I might enjoy it twice as much after this winter.

  7. Brrr, you're making me feel cold. At least you had company and good food. The trout looks delicious. I have a recipe where the trout is baked on top of the potatoes so all the juices soak in.
