Freezing Zucchini


Although I still have plans for a few more fresh zucchini dishes this season, I have decided to take a break from eating it for now.  I've given bags away and I still have so much coming.  So I've decided to freeze it.


After grating it, I strained out as much liquid as I could.  Then one cup went into each little bag, and the little bags into one big freezer bag.








I can now look forward to some deliciously fresh tasting zucchini dishes in the winter without having to eat something that was shipped thousands of miles.





The morning after I packaged it all up, I found this one ... guess I should have checked a bit closer.  Maybe I can find someone to take this one too.

  1. Hey: I'll take your extra zuchinni! I didn't plant any this year due to last year's over-abundance from incorrectly marked 'cucumber' seedlings. I'll trade you cucumbers (or a great chocolate zuchinni cake)

    You may not realize what you're getting yourself into saying you'll take zucchini. Ha ha! I'll call you when the next load is ready (soon!).
