Fresh Strawberry Lassi


This is a wonderfully refreshing drink ... a lassi is basically an Indian-style smoothie.  But lassi's tend to have more yogurt.  It should also be a thinner consistency.  Add more ice or even a small amount of milk if it seems too thick, but the ratio of ingredients below always comes out perfectly for me. 


Mango's are more traditional, but I had these fresh strawberries available straight from the garden!


Ingredients:
8 oz fresh strawberries, hulled
1/4 teaspoon ground cardamom
2 Tbsp honey
1/2 cup ice cubes
1 cup plain yogurt

Note: recipe here to make your own yogurt - I usually make 5-6% but this batch was about 3%.








Puree first 3 ingredients.  Add the ice cubes and puree again.  And finally, puree with the yogurt.  Note: I finally realized after splashing all over the place in the glass bowl that the immersion blender comes with a tall container for a reason! 




Garnish with some fresh basil or mint.  Serve immediately.
